Mac N' Cheese Pizza - GF

The pizza is a special of mine! I used to make it with all gluten included, but now I've had to change some of the ingredients to suit our life style better. It still taste just as good though! The first time I ate this was in high school when a bunch of my friends ordered some. I thought it was so good even though I was very skeptical at hearing about this. 

Because it was a "specialty" pizza at the restaurant we ordered it from it was more expensive than a normal. Which made me think to myself that this could not be that difficult to make. So, I just wung it... Lo and behold it was an instant favorite among myself and my sisters! Now every time I go home I am begged to make it for them! They were visiting this summer and of course requested this be on the menu which was the first time Adam tried it and he too instantly fell under it's spell!

Note:  This recipe uses what is considered to be a white pizza sauce and it's primary ingredient is egg whites. This sauce is also delicious to go along with a Mediterranean type style pizza. I first learned of this pizza sauce when I was visiting with my aunt Lynn in Africa!


Pizza Crust:
  • 1 pkg Bob's Red Mill Gluten Free Pizza Crust
  • 1 1/2 c warm water
  • 2 eggs
  • 2 tbsp olive oil
  • 1 tbsp honey

Pizza Sauce:
  • 2 egg whites
  • 1 tsp basil
  • 1 tsp parsley 
  • 1 tsp cilantro
  • 1 tsp garlic powder 
  • 1 tsp salt
  • 1 tsp pepper

Pizza Toppings:
  • 2 pkg Annie's Gluten Free Mac N' Cheese
  • 1 c heavy cream
  • 1/4 c butter
  • 1 pkg Italian Sausage (optional)
  • 1 1/2 c Pepper Jack Cheese

Pizza Dipping Sauce:
  • 1/4 c salted butter
  • 1 tsp garlic

  1. For the pizza crust you can pretty much just follow the directions on the back of the package. But just in case this is how it's done. 
  2. In a medium bowl add a cup and a half of warm water and then add the yeast package. 
  3. Let it sit for a few minutes or until it starts to bubble a little. 
  4. After that add the eggs, olive oil, and honey. 
  5. Mix it together then add the flour mix.  If the flour is still too sticky for dough add a bit of gluten free flour that you may have around the house.  
  6. Sprinkle some of that on the counter.  Knead the pizza dough just a little bit.  
  7. Form it into a ball. 
  8. Coat the bowl with some olive oil with your hands then put some on the dough and place back into the bowl. 
  9. Moisten a light towel and cover the bowl.  Set in a warm spot or under a light for 30 min or a few hours.  Which ever you have time for.
  10. Once that is done rising heat the oven to 425.  Use your fist to punch into the dough and re-work it a little before spreading it out onto your pizza sheet. 
  11. As you are preparing the pizza sauce and toppings put the dough into the oven for 7 to 10 min. 
  12. For the pizza sauce just take the egg whites and all of the spices you like and mix them together. 
  13. Then with a spatula or if you have a rubber cooking brush spread it around on the semi pre-cooked crust. 
  14. Make that Mac N' Cheese like you normally would.  I like to make mine with heavy cream instead of regular milk because I like that creamer/thickness to it.  Sometimes I make it with coconut milk if I am wanting to be really Paleo like.  But for the pizza I'd say the coconut milk makes it too runny. 
  15. As you're boiling your noodles you can fry up the Italian sausage.  We bought our Italian sausage already seasoned from the store. 
  16. Once those are both done the Mac N' Cheese goes on first.  I like to follow that with some more basil and parsley and pepper. 
  17. Then add the italian sausage.  
  18. And top all of that off with an extra layer of cheese! I like to use mozzarella, but we were out of that today so we just ended up using the half of block of pepper jack cheese that we had. Which added a nice little kick to it! 
  19. Put it in the oven for another 10 or so minutes. If you like to dip your pizza in some kind of sauce I like using just a simple garlic and butter sauce. 
  20. Just melt the butter in a microwave or on the stove.  Add the garlic and some salt if it's unsalted butter and dip away but most importantly...
  21. Enjoy! 

(This is the pizza before it went back into the oven for an extra ten minutes to melt the cheese on top!)
