Paleo Hummus

Hey everyone, this is another one of those recipes that I learned during our 30 day diet reset!  Which it seems that's going to be the trend this week because Thursday's post will also be one of Chris Kresser's.  This recipe is amazing!  It legitimately taste like the real deal.  Who would have guessed!?  Not me!  There are no beans in this recipe no beans at all…instead it is zucchini!

This recipe was probably the most surprising to me.  I had my doubts.  I had serious doubts.  So, I was shocked when it tasted so good and so much like the real stuff!  The other great thing about this recipe is it's a good base for other hummus recipes.  In other words, take this recipe and add your favorite ingredients from your favorite hummus dishes.

  • 2 zucchini
  • 3/4 c tahini
  • 1/4 c olive oil
  • 1 lemon juice
  • 2 cloves garlic
  • 1 tsp ground cumin
  • 1 tsp salt
  • 1 tsp paprika (optional)
  • 1 tbsp fresh parsley (optional)

  1. Peel and chop zucchini into large chunks.
  2. Add all ingredients into a blender except the parsley.
  3. Blend/pulse until you get a smooth mixture.
  4. Chop the fresh parsley and garnish the top along with some extra olive oil.
  5. Enjoy!
