Shrimp Salad with Lemon Olive Oil Dressing

This whole idea was Adam's!!  Woohoo he can do more than Athletic Training!  ;)  We were at the grocery store one day and I wanted to get some Mahi Mahi and he wanted to get some tiny shrimp.  Then one day we didn't have leftovers for lunch so he decided to make us a salad and made up some salad dressing to go along with it as well.

Guess what?  It was great!  (And I'm not even a shrimp fan!)  So, me being me I just had to share it with all of you.  It's so quick and easy that Adam was able to throw the salad and dressing together in the morning before we left for work and that just makes it a win-win.  Have I sold this salad to you enough?  Anyways the point is this is tasty, pretty, and makes a great light meal on it's own or a nice light side dish. :)


  • 2 c spinach
  • 1/8 c thawed baby shrimp (wild caught)
  • 4-5 strawberries
  • 2 thin slices red onion
  • 3 tbsp lemon juice
  • 1 c olive oil
  • 1 tbsp dijon mustard
  • 1/8 tsp garlic powder
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/2 tsp dill
  • 1/2 tsp parsly
  • 1 dash cayenne pepper
  1. Place spinach in a bowl.
  2. Slice strawberries and red onion thinly and sprinkle on top along with thawed shrimp.
  3. Place all of the dressing ingredients in a container and mix well.
  4. Pour on top.
  5. Enjoy!
