Homemade Paleo Herb Crackers

I don't even remember where I came across this recipe but it doesn't even matter because once I made these nothing else mattered!  They were that good!  I was extremely skeptical because I've never had that much luck at making chips/crackers.  The original recipe comes from this blog here and I don't make it any differently besides using different herbs.  As you'll find out though you can use any herbs that you enjoy.

I seriously just want to keep going on and on about these crackers!  It was so funny when Adam came home and tried them.  He was in the kitchen and I was watching TV and doing some wedding planning;) in the living room and I hear him mumbling so I turn and look at him...and he's got a whole mouth full he can't even talk properly so he attempts to smile and gives me a thumbs up.  Yep that's right they got the thumbs up!  Plus, I paired these babies with some of my Paleo Hummus. Making all of this only took about 25 minutes top.  You can find my Paleo Hummus recipe on my blog. Additionally, I added about 1/3 a cup of Parmesan cheese to the recipe because these herbs and Parmesan go so amazingly well together!

  • 2 c almond flour
  • 1/2 tsp sea salt
  • 2 tbsp herbs (I used equal parts basil, oregano, parsley, and rosemary)
  • 2 tbsp water
  • 1 egg white
  • 1 tbsp olive oil
  • 1/4 tsp coconut oil (melted)

  1. Preheat oven to 350 degree F.
  2. In a medium bowl combine almond flour, sea salt, and herbs.  Mix well.
  3. In a small bowl whisk water, egg white, olive oil, and coconut oil.  
  4. Add the wet mixture to the dry.  It probably won't seem like enough liquid at first but it most likely will be.  
  5. Keep mixing until you get a ball of dough.  I probably mixed with a fork for only about 2 minutes until I just dove in with my hands which seemed to work much better.
  6. Once you have your ball of dough rip 2 pieces of parchment paper the size of a small baking sheet. 
  7. Place one sheet on the counter then the dough and then the other piece of parchment on top of that.  Roll out until it's about an 1/8". 
  8. Slide onto a baking sheet and using a pizza cutter cut into bit size pieces.  Around the edges where there may be not a full square I peeled up those pieces and balled them up then flattened to make more instead of just discarding the edges. 
  9. Bake for 10 minutes then turn the oven off and let sit for another 5-10 minutes until golden brown.
